Grandma Wheeler's Meatballs and Rice!

Grandma Wheeler's recipe with a Meg twist!

Ingredients

  • 2 lbs Ground Beef (80/20)
  • 1/4 cup Chopped Onion (or 2 Shallots chopped)
  • 1/3 cup Uncooked Rice
  • 1/3 cup Cracker Meal (or Italian breadcrumbs)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp worcestershire
  • 1 tbsp garlic (minced)
  • 1/4 tsp poultry seasoning
  • 1/2 cup Half & Half
  • 2 cans cream of mushroom soup
  • 3/4 cup water

Instructions

Meatballs:

  • In a large bowl, combine ground beef, chopped onion /or shallots, uncooked rice, cracker meal /or breadcrumbs, salt, pepper, and poultry seasoning.  Work mixture together with hands.  Then begin to form meatballs!
  • Brown your meatballs on medium to high heat in dutch oven.  
    You can also bake at 350 for 30-40 minutes depending on oven. 
    Set your meatballs aside while you begin your sauce.

Sauce:

  • In your pot of choice, add cream of mushroom soup, half & half, water, worcestershire, salt and pepper, and garlic. Stir mixture together and bring to medium to high heat while adding in your browned meatballs.  Let simmer for about 30 minutes to 1 hour.  Watch closely as to not over cook your meatballs.
  • Serve with white rice or egg noodles.
