Peach Upside Down Cake

Ingredients

  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 egg (well beaten)
  • 1/2 cup milk
  • 1/2 cup butter (melted)
  • 1 cup brown sugar
  • 6 peaches Sliced
  • 1 tbsp lemon
  • 1 stick butter

Instructions

Cake Batter/ Cottage Pudding

  • Sift the flour, baking powder, salt and sugar into a bowl
  • In a separate bowl, mix the egg, milk and butter together
  • Stir mixture gently into flour mixture.

Peaches Mixture:

  • In a frying pan, melt the stick of butter along with the brown sugar, sliced peaches and lemon juice. (on medium heat)
  • Once mixture is complete, pour into greases 9X13 glass baking dish. 
  • Cover peach mixture with batter
  • Bake at 400 degrees until top is brown and crusty (~35-40mins)
