Insta-Pot “Charro” Beans

A Southern twist on a Mexican tradition!

Ingredients

  • 2 ham hocks
  • 2 leeks chopped
  • 2 shallots chopped
  • 1 lb. dried pinto beans (soak in water over night)
  • 3 cups water
  • 2 cups beef broth
  • 1 15 oz. can diced tomatoes
  • 1 can green chiles
  • 1 jalapeno minced with seeds removed (optional)
  • 1/2 bunch cilantro
  • 1 tsp. salt
  • 1 tsp. cumin
  • 3/4 tsp. Chipotle chili powder
  • 1/2 tsp. oregano
  • 1/2 smoked paprika
  • 1/2 tsp. black pepper

Instructions

  • ) In the Instapot using the saute setting, cook the ham hocks, shallots, and leeks until soft.
  • ) Add all of the remaining ingredients to the pot.
  • ) Secure lid and change setting to high pressure (my Instant pot has a button for "beans/chili" that I press to set to "Normal" for 30 minutes.
  • ) When the time is up, allow the pressure cooker to do a complete natural release before removing the lid, It will take 35-45 minutes.
